The papadzules are a traditional dish from the cuisine of the Yucatan Peninsula in Mexico. The name means, according to some Mayanists, the food of love (the Mayan potato, food, and dzul, like), or muddy and soaked (from papak, muddy, and zul, soak). They are a mestizo dish with clear Indian influences. It is a relatively simple dish consisting of corn tortillas dipped in a sauce of pumpkin seeds, and filled with boiled egg (a way of tacos) and finally bathed in a tomato sauce with habanero peppers and onions. Can be decorated with red onion and chopped habanero pepper. It is a common dish in the states of Yucatan, Campeche and Quintana Roo, but outside of the peninsula are relatively unknown.
